On our last expedition we covered the basics of dough. This time out we delve into the luxurious world of custards. Transform the ordinary, extraordinary egg into the most satisfying of sweets. These coveted desserts are all about technique and in this class you’ll develop the skills to impress your friends and family with recipes usually reserved for restaurants. Featured Recipes: Madagascar Vanilla Crème Brule, Marbled Chocolate Cheesecake, Crème Caramel, Cinnamon Panna Cotta, Brioche Bread Pudding, and Milk Chocolate Pot de Crème.

Learn about the four great periods of musical history, the Baroque, Classical, Romantic, and Contemporary eras, and discuss the major characteristics of each style. We will listen to representative works and consider their relationship to the ideas and cultures of the times.
Poetry

Ezra Pound wrote "there is no minutia in poetry." This class will broaden the appeal of the message each poet wants readers to understand by reading drafts line by line, word by word, in order to ensure accessibility, clarity, and power, yet not dilute the writer's emotional intention. We will respectfully contribute insights to all student poems. Poetry by established poets will be examined and discussed.
Model Rocketry

This course will teach the theory and practice of the hobby of model rocketry. Design, build, and launch your own rockets, utilizing concepts such as force, torque, and stability to ensure successful designs. Upon completion of the course, you will be allowed to keep the rockets you have built. The books (included in the cost of the course) used will be G. Harry Stine and Bill Stine’s Handbook of Model Rocketry and T. S. Van Milligan’s Model Rocket Design and Construction. Students are also required to join the National Association of Rocketry ($25, not included).
Personal Essay

Focus on the generation of personal essays exploring the possibilities of self-representation. Through reading published essays and in-class exercises we will write a variety of pieces on topics ranging from our grandparents' wedding to political arguments to lunchroom politics. Find a way to communicate your expertise and voice while considering issues of impulse, message, structure, and engaging your audience.
